The Method
- Heat the oven. Preheat to 375°F (190°C). Line eight wells of a muffin tin with paper liners.
- Mix the muffin batter. Whisk flour, baking powder, cinnamon, and salt. In a separate bowl, whisk sugar, eggs, yogurt, oil, and vanilla. Fold the wet ingredients into the dry, then fold in diced peach.
- Make the crumble. Rub the oats, chilled butter, extra flour, and tablespoon of brown sugar together until you have irregular pebbly crumbs.
- Bake until golden. Divide the batter among the liners and scatter crumble on top. Bake for 20 to 22 minutes, until springy and a tester comes out clean.
- Serve warm. Rest the muffins for ten minutes, split them gently, and spread one tablespoon of Peach Vanilla JAMMA over each. Add an extra fleck of vanilla bean if you like.
The fruit spread goes on after baking, preserving the glossy peach flavor and making each muffin feel freshly finished.
